Arabica vs Robusta vs Liberica vs Excelsa Coffee

Quick answer: Almost all the coffee in the world comes from just two species — Arabica (Coffea arabica) and Robusta (Coffea canephora) — with two minor players, Liberica (Coffea liberica) and Excelsa (a close Liberica relative, usually Coffea dewevrei). Arabica is the sweeter, more aromatic, higher-altitude species that makes up the majority of world production; Robusta is hardier, more bitter, much higher in caffeine, and grown lower and hotter. Liberica and Excelsa together are well under 2% of the market but have distinctive, polarising flavours. Knowing the species is the foundation that everything else — origin, processing, grading, roast — is built on top of.

What is a coffee “species,” exactly?

All coffee belongs to the botanical genus Coffea, which contains well over a hundred species. Only a handful are grown commercially, and the four worth knowing are Arabica, Robusta, Liberica and Excelsa. It helps to keep three words straight:

  • Species — a distinct biological type, like Coffea arabica.
  • Variety — in coffee, the trade word for a named Arabica line such as Bourbon or Pink Bourbon within Arabica (botanically many such lines are cultivars, landraces or selections rather than formal botanical varieties).
  • Cultivar — a variety selected and propagated by humans for farming.

So Arabica is a species; Bourbon, Typica and Gesha are named varieties of it (botanically, often cultivars or selections); the giant Maragogype is another well-known one. This article stays at the species level — the layer beneath all of those.

Arabica vs Robusta: the two that matter most

Arabica (Coffea arabica)

Arabica originated in the Afromontane forests of Ethiopia and nearby East Africa — with wild populations also recorded around South Sudan’s Boma Plateau — and spread commercially through Yemen. Genetically it is unusual: it is an allotetraploid with 44 chromosomes (2n = 4x = 44), a natural hybrid whose ancestors are understood to be close to Coffea canephora (Robusta) and Coffea eugenioides. It is also largely self-pollinating, which keeps variety lines stable but leaves the species with relatively narrow genetic diversity.

Arabica grows best in cooler tropical highlands, often roughly 600–2,200 metres depending on latitude. It carries less caffeine — commonly around 0.8–1.6% by dry weight — and tends toward sweetness, gentle acidity, and complex aromatics. The trade-off: it is more fragile, slower to mature, and far more vulnerable to pests and disease, especially coffee leaf rust.

Robusta (Coffea canephora)

“Robusta” is the common name; the species is actually Coffea canephora. It is diploid (2n = 2x = 22) and largely cross-pollinating (self-incompatible), which gives it broader genetic diversity than Arabica. It thrives at lower altitudes, tolerates heat, and resists disease far better — though “more resistant” never means immune.

Robusta carries much more caffeine — commonly 1.7–4% by dry weight, often roughly double Arabica — which contributes to its stronger bitterness. It brings heavy body and, in espresso, a thick persistent crema, which is why traditional Italian espresso blends often include it. Its reputation for harshness comes mostly from commodity-grade lots; “fine Robusta”, grown and processed with care, can be clean, sweet and genuinely complex.

The genetics explain a lot. Because Arabica is an allotetraploid hybrid of two diploid ancestors, it carries traits of both — but its self-pollinating habit and narrow gene pool make it harder to breed for resistance. Robusta’s wider, cross-pollinated diversity is also a resistance reservoir: many rust-resistant Arabica cultivars (Catimor-derived lines, Castillo and others) borrow Coffea canephora resistance genes that entered Arabica through the Timor Hybrid. Liberica and Excelsa sit on their own branch of the same genus, more distantly related to both.

Liberica and Excelsa: the distinctive minority

Liberica (Coffea liberica) is botanically distinct from both Arabica and Robusta. Its trees are large, its leaves big and leathery, and its beans noticeably large and irregular — often almond-shaped with a hooked tip. It is grown in pockets of Southeast Asia (notably the Philippines, where it’s called Barako), Malaysia and West Africa, and makes up a tiny share of global supply. The cup is polarising: smoky, woody, sometimes jackfruit-like and floral.

Excelsa is commonly sold as its own “type.” Older references grouped it under Liberica as Coffea liberica var. dewevrei, but current genomic work treats it as a distinct species, usually Coffea dewevrei, closely related to Liberica. It leans tart and fruity with a lighter body, and shows up mostly as a complexity-adding component in blends rather than a stand-alone star.

Treat these as typical tendencies, not hard rules — farming, processing, grading and roast move every one of them. Arabica is the high-altitude, lower-caffeine, sweeter, more acidic and more disease-prone species — long quoted at roughly 60% of world output, though Robusta’s share has been climbing and recent USDA estimates put the split closer to 53/47. Robusta is the lower-altitude, high-caffeine, full-bodied, bitter and disease-resistant species making up most of the rest. Liberica and Excelsa are niche, large-or-irregular-beaned, distinctively flavoured, and together well under 2% of the market.

Caffeine is a natural pesticide for the plant, and Robusta’s higher levels are part of why it shrugs off pests that trouble Arabica. But beware the neat slogans: Robusta is often about twice Arabica’s caffeine, not exactly twice in every case — the real figure swings widely with cultivar and growing conditions. Altitude is similar: it matters because higher elevations are cooler, which slows cherry maturation and tends to build denser, more flavour-packed beans. But altitude itself isn’t magic — latitude, temperature, rainfall, soil and variety all share the credit.

Which coffee species tastes best?

There isn’t a universal winner — only the right species for the job. For bright, aromatic, single-origin filter coffee, well-grown Arabica usually shines. For espresso with body and crema, a touch of fine Robusta can add depth and a longer finish. For instant and 3-in-1 formats, blends are common because they balance body, solubility, cost and flavour. The biggest myth in coffee is “Arabica good, Robusta bad”: quality is decided by genetics plus farming, processing, grading, roasting and brewing — not by species alone.

This is also where formats diverge from green-coffee botany. A roasted-and-soluble cup like a CafeBank 3-in-1 is a finished product built for convenience and consistency, a separate question from which species the green beans started as. And the functional botanicals in those blends — the herbs, not the coffee — are produced with supercritical-CO2 (SFE) extraction, which uses pressurised carbon dioxide instead of chemical solvents; species classification, processing and roasting are different subjects entirely.
